In September Bungalower Members are getting a special treat by getting to try out the newest menu item at Cityfish (Website | Facebook) restaurant in Thornton Park.

The restaurant, that recently remodeled added a new chef and made some menu tweaks/improvements, has added Sip and Slurp oyster flights to their menu.

The flights include three gulf oysters paired with a 2 oz tasting of Goose Island IPA, chilled Bombay gin martini with a twist of lemon, and our house-infused pepper Bloody Mary. The taste of five adds the raspberry jalapeño mimosa and a cucumber martini.

Much like wine, grapes and coffee, an oyster’s flavor can be attributed to “terroir” or environment. Chef Greg Richie says he and his team carefully chose each pairing based on the varying flavors that each cocktail brings out of the oyster.

“We wanted to offer our oyster lovers a new tasting experience. Our Sip and Slurp oyster flight offers Cityfish guests the option to marry oysters with different, but familiar flavor sensations,” Richie told Bungalower.

The flight of three costs $12 and five is $15. Bungalower Members who join before August 31 will get a card for a free three flight in their September Bungalower Bundle.

Here are the tasting notes from Richie:

IPA – the crisp, cool flavors of Gulf oysters are a perfect balance for the bitterness and floral, earthy flavors of the IPA.

Bombay Gin – The clean flavor of Bombay gin lets the delicate flavors of Gulf oysters shine. The herbal taste of Bombay gin also brings out different notes in lots of different oysters, so this is definitely a cocktail to try with some of our other speciality oysters.

House-infused Pepper Bloody Mary – This pairing was no surprise to anyone, but it is a classic pairing for a reason. This oyster and cocktail pairing is the definition of savory. We encourage our guests to down the oyster and the shot at the same time for a full flavor experience.

Cucumber Martini – Cucumber can serve as a real palate cleanser much like sorbet, so it can intensify the flavor in the light saltiness and brininess of Gulf oysters.

Raspberry Jalapeño Mimosa – Sparkling wines pair well with oysters because the fruity notes and bubbles can really wake up your taste buds and let you experience the full flavor. Our suggestion with this one is to sip, slurp, then sip again.
