The restaurant serves a seasonal Basque menu driven by East End Market’s vegetable garden, local, sustainable seafood and many talented Florida farmers.
The name itself means an underground gastronomic society of people who come together to eat, drink, socialize and experiment with new ways of cooking.
The owners have a big following in the area because they also own the Spanish River Grill Bistro Latino in New Smyrna Beach.
Since opening they’ve been evolving their management team. The latest addition being General Manager Brett Watson who came over from Ravenous Pig and Cask and Larder.
The menu is full of a unique selection of small pates or Pintxos
There is a Gin & Tonic menu, crafted cocktails, beer, all-Spanish wine list and a weekday Pintxos Happy Hour.
The restaurant offers sit down service, with a seated bar as well as an asador bar.
The menu itself changes daily based on what they are sourcing from the local garden and Watson says the idea of sourcing locally is part of the Basque tradition the restaurant follows.
Most [Basque] restaurants have a garden attached, so the fact that we have a garden here is both unique but also typical for a basque restaurant,” he said.
Aside from serving vegetables out of the East End Market garden they also source from other local farmers.
They are also now serving Sunday brunch from 11:00 a.m. to 3:30 p.m. with $2 Mimosas and $3 Bloody Marys.
Their regular hours are Tuesday through Thursday 5:00 p.m. to 10:00 p.m. and on Friday and Saturday from 5:00 p.m. to 11:00 p.m. They open one hour early each day for happy hour.
The traditional Basque menu by Chef Henry Salgado never disappoints. Do yourself a favor and try something different like the grilled octopus or the whole fish served using a traditional Spanish recipe.
And so you can sound cool, it’s pronounced CHO-kos (not tacos).
