Colibri Mexican in Sodo aiming for July 4th opening

This is the part of a series of posts by the Downtown South Main Street District. Downtown South, a 501(c)3 non-profit corporation, was established in the fall of 2008 by a group of local residents and business owners, who recognized its potential and wanted to make a difference in the quality of life for all. 

“…Did someone say family-owned, traditional Mexican Cuisine?

Hold onto your guacamole, folks! Aiming for a July 4^th opening in the Sodo Shopping Center, Colibri is on the verge of completing a remodel of its newest location, occupied by Egg & I up until last month. If you’re familiar with their original Baldwin Park location, then you already know about their multi-generational family recipes and substantial portions. If not, then you’re in for a treat!

The concept remains basically the same – traditional, family recipes perfected over decades (curated by owners Omar & Fabiola Martinez, brother and Manager Ricky Galicia, and mother Marialena Morales according to an article in the Winterpark/Maitland Observer) served with a friendly smile. New additions to their Sodo location include a small build-out in the former Egg & I space, with the biggest change being a new bar featuring updated drink options. While they don’t serve breakfast in their Baldwin Park location, they are strongly considering it for their new location.
