Hinckley’s, an effort led by Chef Matt Hinckley, specializes in sustainable meats and handcrafted charcuterie. They are available nationwide but based out of a processing facility in Lake Helen and a shop in DeLand. This is the first Orlando brick and mortar for the meat purveyor, which has been selling product through vendors like Florida and Co. since their launch.
The new shop will sell classic sandwiches and bread from local bakeries as well as produce from small Florida farms. They will also be selling deli cuts, sausages, bacon, and other cured meats by the pound and “fancy tasting boards.”
Hinckley’s Fancy Meats is aiming to be open by February 2019. In the meantime, the space will be home to a short-lived pop-up by Gypset Co. (Website), a hand-crafted “jewelry for gypsies” shop.
Houndstooth announced they were leaving back in September to take over a new space in the Maitland City Centre project.
