We told you HERE last month that Bruno Zacchini III had pulled his Pizza Bruno concept out of the downtown Orange County Brewers space to ramp up for his new
 Slice by Pizza Bruno and bagel concepts opening later this year.

That space has already found a new tenant, the Orlando Meats crew.

Helmed by Orlando Meats’ Eliot Hillis, expect some out-of-the-box thinking for the menu using quality ingredients, which will soft-open with five different pizzas on May 15.

Operating under the name “Recess” the new pizza concept will use a fancy alkalized dough, think “maltose,” that can handle the higher cook temps of a wood-fired pizza oven with less char on the crust.

Following the as-of-yet unset grand opening, the menu will be expanded to include salads, grain-based salads, and sandwiches.
