“Doshibox is about creating our progressive take on handcrafted, traditional Korean food, conveniently served in a box.  Each box holds many different elements with each one needing special attention to detail during preparation.  We won’t be taking any shortcuts, because every item makes a difference.”

The folks at Omei Restaurant Group are at it again with another virtual kitchen concept launching on Friday, January 15 in their Collab Kitchen space in Curry Ford West.

Located at 4400 Curry Ford Road [GMap], the Collab Kitchen is a new commissary that was created to house multiple ghost kitchen concepts where diners can’t eat in-person and rather all orders are handled by third-party delivery services like UberEats and GrubHub or curbside pickup.

The kitchen is already home to Domu Wings, which we’ve written about previously HERE, as well as Lucky Dragon Chinese Takeout, BENTO Asian Kitchen, and Uncle Sung Chicken and Rice, but soon it will also house Doshibox Korean Kitchen (Instagram), which takes its name from the term doshirak which means “packed meal” in Korean.

Doshibox will specialize in build-your-own rice and noodle bowls, appetizers, and doshirak boxes featuring a protein like beef bulgogi, braised tofu, and Korean fried chicken accompanied by a revolving selection of sides or banchan.

The concept, though backed by Omei, will be led by Gene Kim and co-founders Michael and Ray Gilette who have a combined 35+ years in the restaurant industry. All items will be made in-house including the kimchi and hand-folded dumplings.

All of the aforementioned ghost kitchens will be moving into the soon-to-come Colonialtown food hub building that we wrote about last week HERE.
