A local watering hole is partnering with a popular local chef to open a new artisan pizzeria in the back of their bar.

Thirsty Topher (Facebook | Website) located at 601 Virginia Drive [GMap] in Ivanhoe Village, took some time during the pandemic to build out a new kitchen and then took to social media to find a third-party operator to take over the new space and do their thing.

A number of local businesses apparently answered the call but Thirsty Topher settled on Michael Collantes of Taglish and Soseki fame to come and shack up with them. Collantes told Bungalower that he expects to open his new Perlas Pizza (Instagram) concept to open to the public in the next few weeks with a menu of innovative new pizzas that he’s currently still workshopping with his team.

The name of the concept comes from grandmothers on both his and his wife’s side of the family.
