Bites and Bubbles (Facebook Website) moved out of its original home at  912 N. Mills Avenue [GMap] earlier in the year and moved up the street into a new space with a rooftop patio in the Mills Park development.

The 1,100 SF restaurant they left behind has been snatched up by not one, but two local restaurateurs and split right down the middle to house both of their concepts in a move that we can’t help but applaud.

In the rear of the building, local cookie pop-up Phat Ash Bakes (Instagram | Website) has taken up residency, converting the kitchen into their commissary and then opening up the rear of the restaurant into a walk-up patio area for occasional pop-ups for their neighbors and engaged social media audience. The front of the building, which is still being renovated, will soon be home to a new location for the grilled cheese slingers from Grilled Cheezus (Instagram | Website) which has been operating out of the taproom at Brew Theory in the Parramore neighborhood, which is sandwiched between Blue Swan Boulders and Creative Village.

The new outpost is expected to be open late nights and will serve a similar menu of artisan grilled cheeses like they do in their downtown location.

An opening timeline for Grilled Cheezus has not been made public at this time.
