We told you HERE in August 2021 that the former Bites and Bubbles restaurant at  912 N. Mills Avenue [GMap] would be split in twain and transformed into the home of not one, but two new food concepts, and they’re finally both open.

Popular cookie pop-up Phat Ash Bakes (Instagram Website) opened in the rear of the building last year, leaving the front to be occupied by the folks at Grilled Cheezus (Instagram Website), a grilled cheese concept that’s been operating out of the taproom at Brew Theory in the Parramore neighborhood.

The menu features a variety of artisan grilled cheese sandwiches ranging from the traditional to the more creative, including the Brie-Yonce with brioche, brie, white cheddar, ham, and white truffle honey, or the Tom Cruise (pictured below) with brioche, sharp yellow cheddar, turkey, bacon, and ranch.

They will continue to operate their original kitchen as well as the newly-opened second location, which opened for business the morning of Monday, March 14. They will open for lunch each day and serve through 7 p.m. for the next few months as they hire more staff to work the later shifts.

  1. Thanks for the recommendation! I ate at the new Grilled Cheezus in the Mills 50 district today. Lots of sandwich choices that all come with a tomato bisque soup dipper. I enjoyed the “Brie-Yonce” sandwich (brioche, Brie, White Cheddar, Ham, White truffle honey.) It was very tasty! They have brisket, chicken, turkey, mac and cheese, etc. in some sandwiches too! Stop by!
