Southern-inspired Mason Jar Provisions (Facebook | Website) may have just moved out of its home next to Burton’s Thornton Park (to a secret “bigger and better” location yet to be revealed) just a few weeks ago, but a new tenant is already in the works.

Former Burton’s and The Woods/The Lodge alum Brian Minkel shared with Bungalower that he will be opening a new concept in the recently-vacated kitchen next to Burton’s at 805 E. Washington Street [GMap] by the end of the summer.

The Classic Thornton Park will serve, well, classic bar fare and comfort food ranging from finger food to burgers and sandwiches with rotating specials like meatloaf and “beef commercials” – those old-school diner plates of hash, gravy, and meat piled high on a piece of white bread. He’s even thinking of adding milkshakes.

The Classic will also feature a new ordering system that will let diners order and pay from their tables and have the food brought directly to them, as well as regular counter service.

Minkel, who grew up in Wisconsin, has been a regular face in the downtown scene for years and even worked at The Aardvark for a stint after trying to open a concept in the former Dexter’s Thornton Park space – which lost steam during the pandemic.

Minkel hopes to open The Classic by the end of August following some basic cleaning and updates to the space over the next month and will be adding brunch service further down the line.
