This summer, Mills Market will welcome Okonomi, a nigiri-forward Japanese sushi concept from Chef William Shen (Zaru, UniGirl, and Baldwin Park’s 2-MICHELIN Starred Sorekara).

According to the announcement, Okonomi is designed in the style of Japanese counter seating, allowing guests to walk up without reservations to a 10-seat bar, and order from a range of seafood selections not commonly found in many sushi bars.

In contrast to omakase, where guests entrust their entire experience to the chef, Okonomi (translates to “as you like it” or “your preference”), embraces a guest-driven approach by allowing diners to order sushi by the piece, based on their own tastes and preferences.

Okonomi will join a growing roster of award-winning concepts at Mills Market, the 10,000-square-foot Asian food market that was recently recognized as Orlando Sentinel’s 2025 Restaurant of the Year.

Okonomi will open for lunch and dinner daily, and also offer sake along with grab-n-go sushi boxes and chirashi bowls.
