Chef Michael Collantes, the Michelin-recognized chef/owner of Soseki in Winter Park, has opened a new concept in the Parramore neighborhood, on the edge of Creative Village.

Collantes recently opened Sushi Saint (Instagram | Website) in the former home of Grilled Cheezus, in the Brew Theory dining space behind Blue Swan Boulders, located at 400 Pittman Street [GMap].

The space features a 12-seat temaki bar with a curated menu of small bites with nori handrolls and a lounge for a more formal sashimi service. The bar also serves sake-based cocktails and in-house brewed craft beers on draft.

Reservations are suggested for parties over four people and there’s a $25 corkage fee.
